s101 (January 17th - 26)

Brewed a size 3 batch of kombucha, using the Original Scoby strain, with the pellicle. Standard recipe, (6 cups cold, 6 cups hot, 3/4 c sugar, 9 tea bags). I would like to try cutting the sugar down by 30%. It went a little longer than usual, but the reduced sweetness was good.

s100b1 (January 17th - 22)

Apple cinnamon. Unmeasured amount of unidentified type of apple, several oz of cinnamon sticks. It seems like it should have fermented longer. Mixed it with #s000b2, and let it sit in the fridge.

Apple cinnamon. Unmeasured amount of unidentified type of apple (less than #s100b1), several oz of cinnamon sticks. Excellent, good color and carbonation.

s000b2 (January 17th - 22)

No flavor besides original honey sweetener. Too honey-sweet. Less carbonated?

s000b3 (January 17th - 22)

Mint Rose. Unmeasured amount of rose petals (with sepals) and crushed mint (dried). Added 1 TBSP of sugar. Super tasty, normal carbonation.

s102 (January 26th - February 5)

Brewed a size 3 batch of kombucha, using the Original Scoby strain, with the pellicle. Standard recipe, (6 cups cold, 6 cups hot, 3/4 c sugar, 9 tea bags). The tea steeped for longer than usual. Some time, I would like to try cutting the sugar down by 30%. (Review: the taste wasn't very sweet or very sour, not that great)

s101b1 (January 26th - 29)

2 dried anise flowers and a tablespoon of sugar. Pretty fine flavor.

s101b2 (January 26th - 29)

2 dried anise flowers, a tablespoon of sugar, resued cinnamon sticks. Tastes weird. The anise is good, the cinnamon doesn't compliment it well. (Anise is a very strong flavor, maybe vanilla would go well? Straberry for Twiz?)

s101b3 (January 26th - 29)

2 dried anise flowers and a tablespoon of brown sugar. This is the good one. Keep in mind for another time.

s103 (February 5 - ?15

Brewed a size 3 batch of kombucha, using the Original Scoby strain, with the pellicle. Standard recipe, (6 cups cold, 6 cups hot, 3/4 c sugar, 9 tea bags). I doubled the amount of starter, and set some aside for a hotel, in case of future mold. (#h102)
